I made matzo with unfed sourdough starter, and this is why: I’ve been thinking a… I made matzo with unfed sourdough starter, and that is why: I have been fascinated by the character of the Israelites' unleavened bread, and to me, there are two potential interpretations: Both they combined the dough they might usually have baked however did not have time to let it ferment, so needed to bake it earlier than fermentation...or they KNEW that they would not have time to make actual bread, so they simply combined flour and water and baked it.
