Ingredients: 1 can black beans, drained. 1 can kidney beans, drained. 1 can pinto beans, drained. 1 cup breadcrumbs. 1/2 cup corn kernels. 1/2 cup diced bell peppers. 1/4 cup finely chopped onions. 2 cloves garlic, minced. 1 tsp chili powder. 1/2 tsp cumin powder. 1/2 tsp paprika. Salt and pepper to taste. 4 burger buns. Lettuce leaves. Tomato slices. Sliced avocado. Salsa or hot sauce optional. Cheese slices optional.
Instructions: In a large bowl, mash the black beans, kidney beans, and pinto beans together. Add breadcrumbs, corn, bell peppers, onions, garlic, chili powder, cumin, paprika, salt, and pepper. Mix until well combined. Form the mixture into 4 burger patties. Heat a grill or skillet over medium-high heat. Cook the burgers for 4-5 minutes on each side, or until they're nicely browned and heated through. Toast the burger buns on the grill for a minute or until lightly toasted. Assemble the burgers: Place a lettuce leaf on the bottom bun, add a bean patty, top with tomato slices, avocado, and cheese if desired. Drizzle with salsa or hot sauce if you like some extra heat. Cover with the top bun, secure with a toothpick, and serve hot.
