A beloved family recipe for these potato pancakes has been passed down from one generation to the next. They are great for breakfast or as a side dish because they are crispy on the outside and soft on the inside.
Ingredients: 4 medium potatoes, peeled and grated. 1 small onion, grated. 2 eggs, beaten. 1/4 cup all-purpose flour. 1 teaspoon salt. 1/2 teaspoon black pepper. Vegetable oil for frying.
Instructions: Place grated potatoes in a clean kitchen towel and squeeze out excess moisture. In a large bowl, combine grated potatoes, grated onion, beaten eggs, flour, salt, and black pepper. Mix well. Heat vegetable oil in a large skillet over medium-high heat. Drop spoonfuls of potato mixture into the hot oil, flattening each with the back of the spoon. Fry until golden brown on both sides, about 3-4 minutes per side. Remove pancakes from skillet and drain on paper towels. Serve hot with sour cream or applesauce, if desired.
