Might be a little on the nose, but I've based this off a classic Tom Collins. The original recipe calls for London dry (Old Tom) gin. I've substituted this with a more floral, Bombay Sapphire for a sassy surprise... like Lord John's valet. 😁 😉
Ingredients
2 oz gin (I use Bombay Sapphire)
.75 oz lemon juice
.5 oz simple syrup
Club soda (or tonic water) to top off glass, about 1.5 oz.
Fill your glass (Collins glass works well... or red Solo cup if you're classy like me) with ice, and add all ingredients directly to the glass. Give it a gentle stir to blend. Garnish with a wheel of lemon, lime (just a twist!), and a maraschino cherry.
