In cookie form, enjoy the rich and decadent flavors of Flourless Chocolate Hazelnut Layer Cake! These gluten-free cookies combine toasted hazelnuts, cocoa powder, and a hint of vanilla to create a delectable gluten-free treat.
Ingredients: 1 cup hazelnuts, toasted and finely chopped. 2 cups powdered sugar. 1/2 cup unsweetened cocoa powder. 1/4 teaspoon salt. 3 large egg whites. 1 teaspoon vanilla extract. 1/2 cup semisweet chocolate chips.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, combine the toasted and finely chopped hazelnuts, powdered sugar, cocoa powder, and salt. In a separate bowl, beat the egg whites until soft peaks form. Gently fold the beaten egg whites and vanilla extract into the dry ingredient mixture until fully combined. Fold in the semisweet chocolate chips. Drop spoonfuls of the cookie batter onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for about 10-12 minutes, or until the cookies are set and have a slightly cracked appearance. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
