Ingredients: 1 lb ground beef. Salt and pepper to taste. 8 slices rye bread. 8 slices Swiss cheese. 1 large onion, thinly sliced. 4 tbsp butter, divided. Thousand Island dressing, for serving.
Instructions: Divide the ground beef into 4 equal portions and shape them into patties. Season with salt and pepper. Heat a skillet over medium-high heat and cook the patties for 3-4 minutes per side, or until cooked to your desired doneness. Remove from skillet and set aside. In the same skillet, add 2 tablespoons of butter and saut the sliced onions until caramelized, about 10 minutes. Remove from skillet and set aside. Spread Thousand Island dressing on one side of each slice of rye bread. On the other side of 4 slices of bread, place a slice of Swiss cheese, followed by a cooked beef patty, caramelized onions, and another slice of Swiss cheese. Top each with the remaining bread slices, dressing side down. Heat the remaining 2 tablespoons of butter in the skillet over medium heat. Place the assembled sandwiches in the skillet and cook for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted. Remove from skillet, slice diagonally, and serve hot.
