I think deep down they know that it’s not canon, so they do things to get rid of the competition. Trust me, I’d love for Aerith to live and Zack to live so they can live a fun, happy life of harassing Cloud and Tifa, because that’s what they would do.

The story of FFVII isn’t a nice, fluffy story, though. Zack and Aerith die. Tragically. And it makes all of us sad. We didn’t want that to happen but it’s part of the story.

They think if Tifa dies, then Cloud will be fine and choose Aerith. Except Cloud WON’T be fine.
