Beltane dinner: Brisket, carrot salad, applesauce, and Bunratty Mead! I'd never made brisket in my life, but this was AMAZING! The recipe is courtesy of The Starving Chef on YouTube and is inspired by the brisket from "The Marvelous Mrs. Maisel". It features Coca-Cola in the otherwise-savory braising liquid, a common practice of 1950s cooking (the show is set in that era). I'll admit, it sounded weird, but whoever thought of that back in the day was a bloody genius. It simply added sweetness to the spicy stew instead of making it taste like the soda. The measurements below are what I used, the original recipe halved. But however much you make, seriously, make this. It's SO FREAKIN' GOOD! 1950s-Style Brisket 1 2-3 lbs. brisket, trimmed of excess fat 2 T. vegetable oil 2 t. salt 1 t. black pepper 1/4 cup red wine 1 small white onion, sliced thin 1 carrot, chopped 2 sticks of celery, chopped 1 t. minced garlic (or 4 freshly-minced cloves) 1/2 t. ground ginger (or 1 T. crystalized) 1/2 cup fresh cherry tomatoes 1 cup canned crushed tomatoes 2 T. ketchup 1 3/4 cups Coke, basically one can 2 1/2 t. dried parsley (or 1/4 cup fresh), plus more for garnish 2 t. dried thyme, plus more for garnish Here's how to prepare it: https://www.youtube.com/watch?v=4d-U09yYFGg Braise at 350 F in a Dutch oven or in a casserole dish with a lid for 45 minutes per pound (an hour and a half for a 2 lbs. brisket). Carrot Salad 4 cups shredded carrots 1/2 cup raisins 1 large Granny Smith apple, peeled, cored, and diced 1/3 cup Greek yogurt 1 T. each balsamic vinegar and honey Combine all ingredients gently in a bowl.
