God now I can't stop thinking about it now. "Disassemble, Reassemble, Try again" being Tubbo's instinctual response to the question "what would you do to failed experiments" really is the perfect answer to why Creation acted the way they did.
While it's uncertain whether creation is a purely mechanical, purely bio (like some Frankenstein-esque being), or a mixture of both, it's clear that Tubbo was making them with a purpose. However, for whatever reason, Creation is already up and running and thus trying to do their duty, despite the fact it's still in a jumbled and half-baked state.
Something interesting, though, is that Creation is self-aware enough to know that if Tubbo caught them doing this, Tubbo would do what he normally does to failed experiments. Which now begs the question: how long has Creation been active, and how does it know what Tubbo does to failed experiments? What has Creation been able to see?
I have many questions, so I really hope Tubbo is willing to do more Creation lore in QSMP2024 ahsjdndn
