Ingredients: 2 cups almond flour. 1/2 cup coconut flour. 1/2 cup granulated erythritol. 1 tsp baking powder. 1/2 tsp baking soda. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. 1/4 tsp salt. 3 large eggs. 1/2 cup unsweetened applesauce. 1/4 cup melted coconut oil. 1 tsp vanilla extract. 1/4 cup chopped walnuts optional. 8 oz cream cheese, softened. 1/4 cup powdered erythritol. 1/2 tsp vanilla extract. 2 tbsp heavy cream.
Instructions: Preheat oven to 350F 175C. Grease a bundt pan. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, baking soda, cinnamon, nutmeg, and salt. Add eggs, applesauce, melted coconut oil, and vanilla extract to the dry ingredients. Mix until well combined. Fold in chopped walnuts if using. Pour the batter into the prepared bundt pan and spread it evenly. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. While the cake is cooling, prepare the cream cheese frosting. In a bowl, beat softened cream cheese until smooth. Add powdered erythritol and vanilla extract, then beat until well combined.
