Ingredients: 4 slices of watermelon, about 1-inch thick. 2 tablespoons olive oil. Salt and black pepper, to taste. 1/2 cup fresh mint leaves. 1/4 cup crumbled feta cheese. 2 tablespoons balsamic reduction. 1/4 cup chopped red onion. 1/4 cup toasted pine nuts.
Instructions: Warm up the grill over medium-high heat. Add salt and black pepper to the watermelon slices and brush both sides with olive oil. For about two to three minutes on each side, until grill marks appear, grill the watermelon slices. Take the watermelon off the grill and let it cool down a bit. After grilling the watermelon, cut it into small cubes and put them on a serving platter. Cut up some red onion, fresh mint leaves, and feta cheese to put on top of the watermelon cubes. Spread the balsamic reduction on top of the salad. Sprinkle toasted pine nuts on top to finish. Grilled Watermelon and Mint Salad is ready to eat right away.
