Ruby Tandoh on GBBO, Twitter trolls and her new baking book

 
 
 
Ruby Tandoh, 22, was a finalist in last year’s Great British Bake Off. Her 1st book, Crumb: The Baking Book, was published by Chatto & Windus on Thursday. Originally from Southend, she is studying philosophy and history of art at University College London, and lives in north London with two fellow students.
Routine I wake up, go to the shops and get baking pretty much straight away. Sometimes that goes on really late, till three-4am. Even though I was writing the book there had been a lot of recipes to test – for four and a half months it was constant recipe testing, so I just got into that routine. Now I actually struggle to not do stuff. I cannot sit and watch a film with no whisking eggs.

GBBO Getting into to go on the show was fairly a leap of faith. I had accomplished some baking at school but had began correctly only when I was about 18. I believed it would be a good way to get better at baking. I’m quite a lot somebody who thrives on possessing ambitions and projects so I thought, ‘Well, I know I’ll get greater if I know I have an audition.’ When I found out I’d been productive I had to lie down for a while.
Travel A couple of years ago I went to Portugal and stayed for 3 months working in a hostel kitchen. I was generating the dinners, so nothing particularly exciting, but the desserts usually got a disproportionate quantity of time and interest.

Clothes My wardrobe is full of glittery sequin-covered factors, which I love and seek out like a magpie but do not have the courage to wear. I never put on something brave due to the fact I’m too a lot of a coward, so I’ve got all these stunning issues in my wardrobe that just sit there. I really feel too embarrassed and that it is also ostentatious so I just put on my boring clothing once more.
Inspirations Some of the ideal stuff I’ve seen has been on blogs such as food52.com and thekitchn.com. In terms of actual books I adore Nigel Slater and obviously the queen, Nigella Lawson.
Spoon Christine from Bake Off final year had her husband make these spoons [pictured] for us all at the finish of the show, which was so beautiful. She was the mum of the show and would have everybody round for sleepovers. I’ve stayed in touch with all the other bakers.

University I had to take half a year out from university, which bought me time to write the book, but I’m going back this year to pick up exactly where I left off in my second year. Picking my topic was a last-minute factor. It’s a really interesting degree but certainly not useful in any way. When I was 16 I truly wanted to be a meteorologist and got a mini climate station and learnt the names of the clouds. They’re amongst my favourite issues in the world. I virtually did physics at uni simply because of this.
Dream kitchen I don’t feel I’m especially demanding in terms of my operating environment. Now that I’ve worked on a bench with cameras about me something appears a luxury. I enjoy it in right here. I watch a Tv series on my laptop although I function and I can remember what I’ve been baking by what I was watching, and vice versa. I’ve just been by means of Ally McBeal, which I loved even even though it was preposterous in so many methods.
Grayson Perry This is a fragment of a Grayson Perry pot or vase [pictured]. It is only a souvenir from a big exhibition he did but I truly loved his perform and think it’s part of the reason I wanted to do history of art. I got it when I was possibly 19. So, following the clouds but before the baking.

Filming GBBO The stress of recording GBBO was terrible I do not believe men and women realise that when they’re watching. At times it can go truly well, and if you are feeling reasonably effectively prepared, that stress can be the adrenaline kick you need to have to get going. I feel especially sorry for this year’s bakers as there will be a lot more individuals watching [the show moved from BBC Two to BBC One particular this series]. It’s difficult sufficient to cook a cake if you know someone’s coming round, but think about carrying out it realizing Mary Berry’s coming more than in an hour. It is no surprise that folks make silly errors. When we filmed the show we have been in a cocoon from the outside globe. You’d go property and practise and then at weekends you’d go down to Somerset and bake. I do not have a Television so I have to go on iPlayer an hour soon after everybody else has watched it. Even when I was on it, I just sat there between the hours of eight-9pm, and it was only when 9pm came that I could see what everyone else had observed. I would get all the Twitter praise or abuse and was then always thinking, ‘Oh, God, what have they shown?’ If anything, it was more difficult when the programme was on than getting in the tent.
Twitter The vast majority of the tweets I got even though on the show have been optimistic. If somebody came up to you in the street and stated something actually awful to you, of course you’d answer back. To not answer back on Twitter and supposedly take the moral higher ground is usually hard and is not satisfying at all. The satisfying factor is to reply with some thing funnier than they’ve written, but it always backfires and you’re just fuelling it every single time you reply.

Recipe books Each and every time I test out a recipe I jot it down in 1 of these books [pictured]. There are purchasing lists and sketches and a lot of notes. They typically commence off as diaries and New Year resolutions, like ‘January 1: consume less’ and then the subsequent page will be a picture of a superb ice cream I ate and then a recipe attempting to figure out how it was made.

Girlfriends I went to a screening of Girlfriends at the BFI with my flatmates final year. It was created in 1978 and had been lost just before Lena Dunham talked about it and absolutely everyone got right back on it. It’s about a couple of flatmates and very best close friends and their a variety of fallings-out. It was so very good to see an accurate portrayal of female friendships. It was so well rounded and everyone could pick up on these genuinely subtle nuances in their relationships. Now it is one of my favourite films. They gave us this little photo set [pictured] at the finish in a pack.

Ruby Tandoh, 22, was a finalist in last year’s Fantastic British Bake Off.
Her initial book, Crumb: The Baking Book, was published by Chatto & Windus on Thursday.
The book contains recipies for cake, bread, pastries and sweet dough, which even has its own subsection inside the book.
In this video she gives some suggestions for baking, including why you shouldn’t usually stick religiously to recipies and what bakes are very best for a unique occasion.
