There are lots of different tastes and textures in this Southwest Black Bean Salad with Citrus Dressing. It's a healthy and refreshing dish that's great for any event. When you mix black beans, corn, bell pepper, avocado, and zesty citrus dressing, you get a delicious mix of sweet, spicy, and sour flavors.
Ingredients: 2 cups cooked black beans. 1 cup corn kernels. 1 red bell pepper, diced. 1/2 red onion, finely chopped. 1 jalapeo pepper, seeded and finely chopped. 1/4 cup fresh cilantro, chopped. 1 avocado, diced. Zest and juice of 2 limes. Zest and juice of 1 orange. 2 tablespoons olive oil. 1 teaspoon cumin. Salt and pepper to taste.
Instructions: Put black beans, corn, red bell pepper, red onion, jalapeo, cilantro, and avocado in a large bowl. To make the citrus dressing, mix orange zest, orange juice, cumin, salt, and pepper in a small bowl. Add the citrus dressing to the salad and gently toss everything together. Put the salad in the fridge for at least 30 minutes before you serve it so that the flavors can mix. Enjoy!
