Ingredients: 1 cup all-purpose flour. 1/2 cup sugar. 1/2 tsp baking powder. 1/4 tsp baking soda. 1/4 tsp salt. 1/2 cup almond milk or any plant-based milk. 1/4 cup lemon juice. 2 tbsp chia seeds. 1/4 cup unsweetened applesauce. 2 tbsp coconut oil. 1 tsp vanilla extract. 1/2 cup blueberries fresh or frozen.
Instructions: Set the oven temperature to 175C 350F. Mix the flour, sugar, baking soda, baking powder, and salt together in a mixing bowl. Combine the chia seeds, lemon juice, and almond milk in a different bowl. Give it five minutes to solidify. To the wet mixture, add the applesauce, vanilla extract, and coconut oil. Mix thoroughly until fully incorporated. Stir the dry ingredients until they are well combined after adding the wet mixture. Take care not to blend too much. Gently fold in the blueberries. Spoon about two thirds of the batter into each mold in a doughnut pan that has been greased. Bake for 15 to 18 minutes, or until a toothpick inserted into a doughnut comes out clean, in a preheated oven. After taking them out of the oven, allow the doughnuts to cool in the pan for a few minutes before moving them to a wire rack to finish cooling.
