Is there anything about Shepard that the Yang Gang knows and the Normandy crew have no idea about? What about vice versa?
I have been turning this over in my head since you sent it, because it is such an EXCELLENT and revealing question.
So, as the overlapping element, here are things Kaidan knows that almost no one else from either squad does:
Sam's estrangement from his mother and the details about his father's disappearance (Liara knows a little bit about this through the melds).
The mashed potatoes as a trauma trigger.
That Sam put a gun to Major Kyle's head on Torfan (Aslany...might know this. I am not committing to that).
To answer your question, I thought a lot about the different influences, sources of stress, pressure, etc. exerted on Sam on the Normandy vs. the 'Yang, and how that changes him. I also did a lot of thinking about who Sam is to each squad as a result, where the differences are in their perceptions of him, what sides of him they know best, and where those things overlap and don't between the two squads.
On the 'Yang, Sam isn't in command. He's an XO, but ultimately he is executing someone else's orders. He goes on the missions he's sent on, not missions he chooses. He's leading, sure, but he has oversight. On the Normandy, the buck stops with him. And...now the galaxy is at stake. He's under a LOT more stress and carrying a lot more responsibility while being under a lot more scrutiny, not to mention he is now serving as an ambassador of sorts to four different alien races. I think the Normandy crew sees a lot less of 'Sam' and a lot more of 'Commander Shepard' than the 'Yang crew. But conversely, the 'Yang crew knew the Butcher of Torfan when he was a lone wolf asshole. Garrus and the SR2 crew have now met that asshole, but unlike the 'Yang crew they don't know how to handle him. In part, this is because Sam uses his reputation as both humanity's first Spectre and the Hero of the Citadel to bully anyone on the SR-2 who tries to stand up to him. On the 'Yang, he was just that guy who ran the early am drills they all hated, making it easier to call out his bullshit.
If Kara Pendergrass had been successfully recruited by Cerberus, at the first meal Sam skipped in the mess she would have barged into his cabin and dragged him down to the crew deck, because she knows from experience that the worst thing for everyone when Sam is being a stubborn prick is to let him sit in a hole and stew. But no one on the SR1/2 outside of Kaidan gets this, and even if they did, none of them have enough of a casual relationship with him to feel like they can do that.
ALL THAT SAID, here are some fun specific things the 'Yang crew know that the Normandy crew does not.
That Sam's favorite band is Galactikraken*, his favorite song is 'Starship Velociraptor*,' and he will sing it at karaoke under the right conditions.
His exhaustive list of food crimes, of which the Normandy is only aware of a few.
That he does have a limit with said food crimes, and to the utter dumbfounding of everyone on the 'Yang, it's drinking pickle juice. (Aslany will drink an entire jar).
His obsession with really shitty B movies. This might come out a little during ME3, but not with the ME1/2 crews.
That in a bet involving "who can put more of 'x' in their mouth," Sam will always win - unless Aslany plays. The only one who understood Clay's lament about Sam being asexual was also Aslany, who just rolled her eyes.
The 'Yang crew also had their own unique approaches to being prepared for a Sam Glucose Crash. For instance, Pendergrass made sure she always carried a salarian MRE (which is just a nutrient brick). The Normandy crew is largely unaware of the glucose problem, or do not understand how serious it can be - because he had a much better handle on it by that point.
What does the Normandy crew know that 'Yang squad doesn't?
That he likes having pets. They would be shocked by the fish tank. Less surprised by his track record of taking care of fish.
That he paints models and is good at it. He never did it on the 'Yang. It was a childhood hobby he resurrected during ME2.
I don't think the 'Yang crew outside of Kaidan really clocks how important Anderson is to Sam, whereas the Normandy crew gets a front row seat for that relationship.
Only Garrus and possibly Joker know just how shitty Sam was on Zorya. No one on the 'Yang crew learns how far gone he was during ME2.
*This is a real band and a real song and the entire album slaps. But I envision this as an in-universe, contemporary band in the 2180s because it's too perfect not to.
