Sunomono is a cool Japanese salad made with seaweed and cucumbers that is dressed in a sweet and sour vinegar mixture. It goes well with sushi and makes a great appetizer.
Ingredients: 2 cucumbers, thinly sliced. 1/4 cup rice vinegar. 1 tablespoon sugar. 1 teaspoon salt. 1 tablespoon soy sauce. 1 tablespoon sesame oil. 1/4 cup wakame seaweed, rehydrated and chopped. 1 tablespoon toasted sesame seeds.
Instructions: In a small bowl, mix rice vinegar, sugar, salt, soy sauce, and sesame oil until sugar and salt dissolve. Place thinly sliced cucumbers in a large bowl and pour the vinegar mixture over them. Toss gently to coat. Add rehydrated and chopped wakame seaweed to the cucumbers and toss again. Sprinkle with toasted sesame seeds before serving.
