A tasty and refreshing salsa with bacon, avocado, cherry tomatoes, and black beans. This dish, with its zesty lime juice and fresh ingredients, is the ideal side dish or appetizer for your summertime get-togethers.
Ingredients: 1 can 15 oz black beans, drained and rinsed. 1 cup cherry tomatoes, quartered. 1 ripe avocado, diced. 4 slices cooked bacon, crumbled. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1 jalapeo, seeds and membranes removed, finely chopped. Juice of 2 limes. Salt and pepper to taste.
Instructions: In a large bowl, combine black beans, cherry tomatoes, avocado, crumbled bacon, red onion, cilantro, and jalapeo. Drizzle lime juice over the mixture and gently toss to combine. Season with salt and pepper to taste. Chill in the refrigerator for at least 30 minutes to let the flavors meld together. Serve as a salsa with tortilla chips or as a side dish to complement grilled meats or fish.
