A refreshing and unique twist on the classic Panzanella salad, this Tomato, Melon, and Cornbread Panzanella is perfect for summertime gatherings. It combines the sweetness of ripe melon with the tangy goodness of tomatoes, all mixed with crispy cornbread cubes and a flavorful dressing.
Ingredients: 2 cups of cubed cornbread. 2 cups of diced ripe tomatoes. 2 cups of diced ripe melon such as cantaloupe or honeydew. 1/2 cup of red onion, thinly sliced. 1/4 cup of fresh basil leaves, torn. 1/4 cup of fresh mint leaves, torn. 1/4 cup of extra-virgin olive oil. 2 tablespoons of red wine vinegar. Salt and pepper to taste.
Instructions: Preheat your oven to 350F 175C. Spread the cubed cornbread on a baking sheet and toast in the oven for about 10 minutes or until it becomes crispy and golden brown. Remove and let it cool. In a large mixing bowl, combine the diced tomatoes, diced melon, sliced red onion, torn basil leaves, and torn mint leaves. In a small bowl, whisk together the extra-virgin olive oil and red wine vinegar to create the dressing. Season with salt and pepper to taste. Add the toasted cornbread cubes to the mixing bowl with the other ingredients. Drizzle the dressing over the salad and gently toss everything together to coat the ingredients evenly. Allow the salad to sit for about 10 minutes to let the flavors meld before serving. Serve your Tomato, Melon, and Cornbread Panzanella Salad and enjoy!
