Ingredients: 1 lb baby potatoes, boiled and halved. 8 oz smoked salmon, flaked. 1/2 cup red onion, thinly sliced. 1/4 cup capers. 1/4 cup fresh dill, chopped. 1/4 cup Greek yogurt. 2 tbsp mayonnaise. 1 tbsp Dijon mustard. 1 lemon, juiced. Salt and pepper to taste. Mixed greens for serving.
Instructions: In a large bowl, combine boiled and halved baby potatoes, flaked smoked salmon, thinly sliced red onion, capers, and chopped fresh dill. In a separate bowl, whisk together Greek yogurt, mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Pour the dressing over the salad ingredients and gently toss to coat. Serve the smoked salmon potato salad over a bed of mixed greens. Garnish with additional dill, if desired. Enjoy!
