Another Zucchini recipe
Hello :) Hope you’re all having a great summer and enjoying the sun. Here’s a new recipe for those of you who love this summer veggie as much as I do. :D
Ingredients: 1 large Zucchini (or 2-3 smaller ones) 4 tomatoes (I used beefsteak tomatoes because there’s so much juice in them) 1 onion 300g of Fusilli noodles (or any other type of noodles you prefer) 300 mL whipping cream (not whipped of course) 100 mL milk Mozzarella cheese 2-3 eggs seasoning of your choice a bit of olive oil
Cut the Zucchini in to pieces. Peel the tomatoes (this is easier if you drop them into hot water first) and cut them into pieces as well. Make sure not to lose the tomatoe juice. Cut the onions into very small pieces. Cook the noodles for about 4 minutes, just so they aren’t completely raw. Cut the mozzarella cheese into small pieces as well. Mix the whipping cream, the milk and the eggs together and add the seasoning of your choice (I used garlic salt, pepper and tomatoe seasoning). Pre-heat the oven to 200° C. Drip-dry the noodles and mix them with the onions, zucchini and tomatoes in a large bowl. Take a baking dish and grease it with a bit of olive oil. Add the noodle mixture in. Now poor your egg-milk sauce over the mixture and add the mozzarella cheese on top. Bake for 20-30 minutes.
