I set it back up & sprinkled diatomaceous earth around it. Hopefully, the culprit will leave behind tracks on its next visit & I can figure out what we’re dealing with: 

Some folks might already be aware of this but suet cake, although marketed mainly for attracting woodpeckers, is enjoyed by a number of birds. Here in the Mid-South of the United States, I have seen nuthatch, northern mockingbirds, american robins, house sparrows, carolina wrens, blue jays, warblers, kinglets and, yes, woodpeckers enjoying our suet cake. Basically, most insect-loving bird species will feed on suet cake. Also, most insect-loving species that we have encountered also like berries. That’s why we gave up on growing blackberries for our own consumption. So if you are looking to attract more than just seed-eating birds to your feeding stations, add one or more suet cakes:
