If you have done any kind of gardening you know how your squash plants come up what seems like overnight
And there is always one hiding from you that you swear wasnt there before
The result is often some monster produce
A lot of folks will throw these out. At this size often the centers get pithy and while perfectly safe its not a pleasant eating experience to most
So what to do?
Well you could compost it. Give it to local wild life. Some livestock can eat it and its safe for dogs (in extremely small quantities!)
But its a lot of food right?
Personally I hate wasting food. Very little sends me in to orbit quicker. I can handle composting it but it still chaps my hide.
So I dehydrate it
Dried zuch’s are great for pasta, stew, and almost any dish you want to mix a veggie in to. Best of all once they dry they take up maybe 1/32 f the space they did prior. You can put then in a nice sized spaghetti jar with desiccant and it will last quite a while. That lets you kill 2 birds with one stone, by one less jar going in to trash.
A lot of things at my place end up in this fashion. If its near wilting, not quite there, damaged, injured, or was stripped by caterpillars etc I’ll wash it, clean it, de-lice it so to speak and then just dry it either as chips or powder. Depends on what it is.
I can store more of it, longer and its better for me.
Things that are too far round the bin get composted. But I try to save what I can. Its my food after all.
