Oh yeah Blitz totally would do that. His employees are his family and he's nosy with those he considers that. And while Striker would be surprised, and would sure get annoyed. I don't think he'd quit. Eventually getting pretty chill with Blitz and almost expecting him around half the time.

Striker getting up in the middle of the night to get a blanket:

Blitz munching on popcorn and watching tv: Hey Strikes! Whatcha doing?

Striker: Getting a blanket. My bedrooms chilly..

Blitz:I could sleep with you! Body heat is great for getting warm~

So... I'll give some context to this

Imagine this:

Blitz had a very exhausting day at work, finally their business was doing well and they worked harder than ever.

He would go home since his work hours ended and he was thinking about what to do or buy for dinner for his precious daughter Loona, just when he leaves his office he sees him ... Striker was standing not far from him, with his piercing gaze staring at him, radiating self-confidence and masculinity. Blitz panicked and tried to grab his pistol which, unfortunately for him, was not in his pocket as usual, he had forgotten it in his office.

Striker slowly approaches him and Blitz is sure that he will die, however, being mere inches from his face, Striker does not stab or hit him - "I heard that your business has improved ..." - he affirms without waiting for an answer. and slowly he unbuttons Blitz's shirt - "The offer still stands ... you know I'm right when I say that the system is against us and you know perfectly well that that pompous prince doesn't respect you as you deserve..."- Feeling Striker's breath in his ear as he says this makes his skin crawl, he was paralyzed and adrenaline ran through his veins as he couldn't be sure that he would not be killed.

"You have a lot of potential to be one of the most powerful beings in hell and show those idiots what we are capable of, you can still join me ..." - His sensual voice and the way he caresses his skin makes him shiver, Blitz wants to tell him no, he wants to tell him to fuck off, but he can't, Striker has something that makes all his senses and coherent thoughts blur and disappear. - "The 《yes》 does not have to be immediate, you can take your time, but until you make up your mind, I will give you something so that you remember what I am capable of offering in exchange for an affirmative answer ..."-Striker continues to administer his caresses all over Blitz's body, paying special attention to his nipples, drawing soft moans from his mouth.

Hmm not sure, he's still unconfirmed but in terms of my own headcanon I feel both are likely

He and Blitz have a good bit chemisty throughout Harvest Moon, and he seems to have an almost sadistic pleasure in tormenting Moxxie, so him being into guys I feel is pretty likely, as for the other side, well he's pretty nice to Millie at first, but he's also working for her parents at the time so it might just be decency for that.
