But it actually makes sense and I would argue is a good thing.

And one thing psychiatric service animals can do from what I know is called grounding. And this, String Bean's lack of reaction feels like she's trying to keep Luz a bit more grounded as you can in a nightmare to reality.
Now how well its working is a whole other argument.
But if she's trying to ground her owner. Then the last thing she needs to be doing is having a freak out over the situation herself. Because then it doesn't help Luz.
Point is there's a reason and a good one to not have String Bean having a freak out with her owner.
