This vegan mozzarella cheese substitute melts easily and is creamy and stretchy. It's great for pizzas, lasagnas, and other recipes that call for melted cheese. It's simple to make and made with healthy ingredients.
Ingredients: 1 cup raw cashews, soaked overnight. 1/4 cup nutritional yeast. 2 tablespoons tapioca starch. 1 tablespoon agar agar powder. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1 teaspoon salt. 2 cups water. 2 tablespoons lemon juice. 1 tablespoon apple cider vinegar.
Instructions: Drain and rinse the soaked cashews. In a blender, combine cashews, nutritional yeast, tapioca starch, agar agar powder, garlic powder, onion powder, salt, water, lemon juice, and apple cider vinegar. Blend until smooth. Pour the mixture into a saucepan and cook over medium heat, stirring constantly, until it thickens and becomes stretchy, about 5-7 minutes. Transfer the mixture to a mold or container lined with parchment paper. Smooth the top with a spatula. Let it cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until firm. Once chilled and set, the mozzarella cheese can be shredded, sliced, or melted as desired.
