Fresh strawberries and coconut whipped cream make this vegan dessert delicious and light. You can satisfy your sweet tooth with this tasty treat that doesn't contain any dairy or animal products.
Ingredients: 1 cup fresh strawberries, hulled and sliced. 1 can 13.5 oz full-fat coconut milk, chilled in the refrigerator overnight. 2 tablespoons maple syrup. 1 teaspoon vanilla extract.
Instructions: Use an electric mixer to whip the chilled coconut milk in a bowl until fluffy peaks form. Add the vanilla extract and maple syrup slowly to the whipped coconut milk. Put slices of strawberries at the bottom of bowls or glasses that will be used for serving. Put a big dollop of the coconut whipped cream mixture on top of the strawberries. If you want, you can repeat the layers. Put it in the fridge for at least 30 minutes before you serve it. If you want, you can add more sliced strawberries as a garnish.
