This Seafood Chawanmushi is a delicate Japanese steamed egg custard dish infused with the flavors of seafood. It's a comforting and nutritious dish perfect for any meal.
Ingredients: 4 large eggs. 2 cups dashi stock. 1 tablespoon soy sauce. 1 teaspoon mirin. 1/2 teaspoon salt. 4 medium-sized shrimp, peeled and deveined. 4 small scallops. 4 slices fish fillet such as salmon or cod. 4 shiitake mushrooms, sliced. 2 green onions, thinly sliced. 1 teaspoon sesame oil.
Instructions: In a bowl, beat the eggs slowly so that they don't make too much foam. Salt the eggs and add the dashi stock, soy sauce, mirin, and salt. Combine well. Put equal amounts of shrimp, scallops, fish fillet, and shiitake mushrooms into 4 small bowls that can handle heat. Place the seafood and mushrooms in the bowls. Then, pour the egg mixture over them until they are almost full. Cover each bowl with a piece of foil. Put the bowls in a steamer and heat it over medium-low. Steam for 10 to 12 minutes, or until the custard is just set. Take the bowls out of the steamer when they are done. Add sliced green onions and a drizzle of sesame oil to the top of each bowl. Enjoy while hot!
