Fresh pasta

A few weeks ago I received an amazing birthday present: a gift of ‘special’ food from a restaurant: Spring at Somerset House. It came in a large box and contained a spinach and cheese galette, freshly made rosemary focaccia, a large piece of goat cheese, organic butter and eggs, a bunch of unusual herbs, and two boxes of fresh tagliolini pasta.

This was such a treat in a time when supermarket deliveries were uncertain and limited.

Here is what I did with the pasta:

First I served some with my home-made tomato sauce (a freezer staple for me)

Then, I made a type of bolognese - what I call ‘savoury mince’, which I served with broccoli and peas.
