This nutrient-dense Paleo salad, which boosts vitamin D, has lots of spinach, mushrooms, and almonds. Vitamin D, which is crucial for managing Crohn's disease, is present in spinach. Including veggies and healthy fats also promotes a Paleo lifestyle and may help with general health improvement.
Ingredients: 2 cups spinach leaves. 1/2 cup sliced mushrooms. 1/4 cup diced red bell pepper. 1/4 cup diced cucumber. 1/4 cup cherry tomatoes, halved. 2 tablespoons sliced almonds. 1 tablespoon extra virgin olive oil. 1 tablespoon apple cider vinegar. Salt and pepper to taste. 1 grilled chicken breast optional, for extra protein.
Instructions: In a large bowl, combine spinach, mushrooms, red bell pepper, cucumber, cherry tomatoes, and almonds. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper to make the dressing. Drizzle the dressing over the salad and toss to coat evenly. If desired, top the salad with grilled chicken breast for extra protein. Serve immediately and enjoy!
