A tasty and healthy burger made with patties of black salsify and spinach, great for a different kind of burger experience.
Ingredients: 200g black salsify Schwarzwurzel, peeled and sliced. 150g fresh spinach, chopped. 1 small onion, finely chopped. 2 cloves garlic, minced. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1 egg. Salt and pepper to taste. 4 burger buns. Lettuce leaves. Tomato slices. Mayonnaise. Olive oil for frying.
Instructions: Boil the black salsify Schwarzwurzel slices in salted water until tender, about 15 minutes. Drain and set aside. In a pan, heat a little olive oil over medium heat. Add the chopped onion and garlic and saut until translucent. Add the chopped spinach to the pan and cook until wilted. Remove from heat and let it cool. In a mixing bowl, combine the cooked spinach mixture, boiled black salsify, breadcrumbs, grated Parmesan cheese, egg, salt, and pepper. Mix well to form a burger mixture. Divide the mixture into 4 portions and shape them into burger patties. Heat a bit more olive oil in a pan and cook the burger patties for about 4-5 minutes on each side, or until they are golden brown and cooked through. Toast the burger buns in the pan or oven until slightly crispy. Assemble the burgers by placing a lettuce leaf and tomato slices on the bottom half of each bun. Top with a black salsify burger patty. Spread mayonnaise on the top half of the buns and place them on top of the burger patties to complete the burgers. Serve hot and enjoy your Spinat Schwarzwurzel Burger!
