Ingredients: 2 cups blanched almond flour. 1 cup fresh spinach leaves, packed. 1 cup shredded sharp cheddar cheese. 1/4 cup grated Parmesan cheese. 1 large egg. 1 tablespoon olive oil. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/2 teaspoon salt. 1/4 teaspoon black pepper.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Pulse the fresh spinach in a food processor until it is very small pieces. Put the almond flour, chopped spinach, shredded cheddar cheese, grated Parmesan cheese, egg, olive oil, garlic powder, onion powder, salt, and black pepper in a large bowl. Mix until everything is well mixed and a dough forms. Place the dough on the baking sheet that has been prepared and flatten it into a thin, even layer that is about 1/8 inch thick. Cut the dough into crackers by cutting it into small squares or rectangles with a pizza cutter or a sharp knife. Warm the oven up and put the crackers in it. Bake for 12 to 15 minutes, or until the edges are golden and crispy. Take it out of the oven and leave it on the baking sheet to cool completely before you serve it. After the crackers have cooled, keep them at room temperature for up to 5 days in a container that won't let air in.
