Fiesta Chicken Chowder is a hearty and tasty soup made with spicy vegetables, tender chicken breast, and lots of different spices. It's smooth and creamy, and it's great for a cozy meal.
Ingredients: 1 lb chicken breast, diced. 1 onion, chopped. 1 red bell pepper, diced. 1 can corn kernels, drained. 1 can black beans, drained and rinsed. 1 can diced tomatoes. 4 cups chicken broth. 1 cup heavy cream. 1 tbsp olive oil. 1 tsp cumin. 1 tsp chili powder. Salt and pepper to taste. Chopped cilantro and shredded cheese for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the chicken breast pieces and cook until they turn brown. Put in the diced red bell pepper and chopped onion. Cook until the vegetables get soft. Black beans, diced tomatoes, cumin, chili powder, salt, and pepper should all be added at this point. Bring to a boil, then lower the heat and let it cook for 20 minutes. Add the heavy cream and stir it in. Let it cook for five more minutes. Add chopped cilantro and shredded cheese on top and serve hot.
