Ingredients: 1 cup 240ml unsalted butter, softened. 1 cup 200g granulated sugar. 1/4 cup 60ml molasses. 1 large egg. 2 cups 250g all-purpose flour. 2 tsp baking soda. 1/2 tsp salt. 1 tsp ground cinnamon. 1/2 tsp ground ginger. 1/4 tsp ground cloves. 1/4 cup 50g granulated sugar for rolling.
Instructions: Preheat your oven to 375F 190C and line baking sheets with parchment paper. In a large mixing bowl, cream together the softened butter and 1 cup of sugar until smooth. Add the molasses and egg to the mixture, and beat until well combined. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and cloves. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Chill the cookie dough in the refrigerator for about 30 minutes. Take out the chilled dough and shape it into 1-inch balls. Roll each ball in the remaining 1/4 cup of sugar to coat. Place the sugar-coated dough balls on the prepared baking sheets, leaving some space between each cookie. Bake the cookies in the preheated oven for 8-10 minutes or until they start to crack on the top. Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
