Ingredients: 1 cup rolled oats. 1/2 cup butter, softened. 1/2 cup brown sugar. 1/4 cup granulated sugar. 1 egg. 1 teaspoon vanilla extract. 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. For the spiced cream filling:. 1/2 cup heavy cream. 2 tablespoons powdered sugar. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground cloves.
Instructions: Set the oven to 350F 175C and heat it up. Put parchment paper on the bottom of a baking sheet. Melt the butter and mix it with the brown sugar and granulated sugar in a bowl until the mixture is light and fluffy. Add the egg and vanilla extract and mix them in well. Mix the flour, baking soda, ground cinnamon, and salt together in a different bowl. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Add the rolled oats and mix them into the dough until they are spread out evenly. Take dough balls about the size of a tablespoon and roll them into balls. Take them off the baking sheet and put them on it, leaving some space between each one. Make each ball of dough a little flatter with the back of a spoon. Put it in an oven that is already hot and bake it for 10 to 12 minutes, or until the edges are golden brown. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. Add the spices to the heavy cream and whip it until soft peaks form. The powdered sugar, ground cinnamon, nutmeg, and cloves should be added slowly and carefully until they are well mixed in. As soon as the cookies are cool enough to touch, spread or pipe a lot of the spiced cream filling onto the flat side of half of them. Place the rest of the cookies on top to make a sandwich with the spiced cream filling in the middle. For fun, sprinkle some ground cinnamon on top of the cookies to make them look nice. The spiced cream filling will set better if you put the cookies in the fridge for one hour. Enjoy these tasty oat cookies with a cream filling that has been spiced!
