Sopa is a hearty and tasty Mexican soup made with a mix of beans, vegetables, and shredded chicken in a tasty broth. With fresh cilantro and creamy avocado slices on top, it's a hearty and authentic dish.
Ingredients: 1 cup diced tomatoes. 1 cup chopped onions. 1 cup sliced carrots. 1 cup corn kernels. 1 cup black beans, cooked. 1 cup shredded cooked chicken. 4 cups chicken broth. 2 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 1 avocado, sliced for garnish. Fresh cilantro leaves for garnish. Lime wedges for serving.
Instructions: Put onions and garlic in a large pot and cook them until they smell good. After you add the corn, carrots, and tomatoes, cook for 5 minutes. Add salt, pepper, cumin, and chili powder and mix well. Put in the chicken broth and raise the heat. After you add the black beans and chicken shreds, let it cook for another 10 minutes. Make the seasonings taste better. Add avocado slices, cilantro, and lime wedges to the top of the hot dish.
