so, last week as the big winter storm was actively hitting the majority of the US including where iām currently living, i was struck with the desire to bake something, which is incredibly rare for me. so after looking up some recipes and scouring through the cabinets bc neither my partner nor i Ever bake, i manage to scrounge together everything needed for a simple chocolate chip cookie recipe except for vanilla extract. now, despite rarely doing it, i do know *how* to bake, so i certainly understand that i canāt just remove it, or substitute anything i want bc baking is a fickle beast. so i did some more research and ended up substituting honey for it (one thing about me is that im a sucker for local honey so im always buying it at markets and festivals) and holy shit those cookies were life changing. we finished the batch in 2 days and i made more. the addition of the honey definitely makes the dough a bit stickier and more crumbly than vanilla extract would but its not difficult to work with and its 100% worth it. the conversion is 1 tbs of honey for 1 tsp vanilla extract so everyone go try it now okay?
