Ingredients: 1 cup unsalted butter, softened. 1 1/2 cups granulated sugar. 2 large eggs. 2 3/4 cups all-purpose flour. 2 teaspoons cream of tartar. 1 teaspoon baking soda. 1/4 teaspoon salt. 3 tablespoons granulated sugar for rolling. 1 tablespoon ground cinnamon for rolling.
Instructions: Preheat the oven to 350F 175C. In a large mixing bowl, cream together the softened butter and 1 1/2 cups of granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. In a small bowl, mix together the remaining 3 tablespoons of granulated sugar and 1 tablespoon of ground cinnamon for rolling. Scoop out about 2 tablespoons of cookie dough and roll it into a ball. Roll the dough ball in the cinnamon-sugar mixture until coated evenly. Place the coated dough ball on a baking sheet lined with parchment paper. Repeat the process, spacing the dough balls about 2 inches apart on the baking sheet. Using the bottom of a glass, gently flatten each dough ball. Bake in the preheated oven for 8-10 minutes, or until the edges are golden but the centers are still soft. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
