1 cup butter 2 cups sugar 3 eggs 1 tsp vanilla 3/4 cup sour cream (I used fat free) 2 1/2 cups flour 1 tsp baking powder 1/2 tsp salt 2 tsp cinnamon 1 1/2 cups cinnamon chips Topping: 3 Tbsp sugar + 3 tsp. cinnamon
Cream butter and sugar till fluffy. Mix in eggs, vanilla, and sour cream. Stir together flour, baking powder, salt, and cinnamon. Add to wet ingredients and stir lightly. Add the cinnamon chips and stir till combined. Divide batter into 4 mini loaf pans. (Mine are 5×3″). Combine topping ingredients and sprinkle over the batter in each of the pans. Bake at 350° for 35-38 minutes. Cool for 5-10 minutes before removing from pans onto cooling racks. -Makes 4 mini loaves
Snickerdoodle Bread
Snickerdoodles are one of my favorite cookies to make. I thought that a bread form would be interesting to try and it seems like it would be a good breakfast item to pair with some coffee in the morning.
2 1/2 cups of flour
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 cup of butter, softened
2 cups of sugar
3 eggs
1 tsp. vanilla
3/4 cup of sour cream
1 pkg. Hershey's cinnamon chips
Topping:
3 tbs. sugar
3 tsp. cinnamon
Directions:Â
Cream butter, sugar, salt and cinnamon until fluffy. Add eggs and mix well.
Add vanilla and sour cream; mix well
Mix flour and baking powder in a separate bowl. Add to wet ingredients and mix until combined.
Add cinnamon chips and stir into batter; set aside.
Spoon batter into 4 mini loaf pans about 2/3 full.
Mix 3 tbs. sugar and 3 tsp. cinnamon in a bowl and sprinkle over batter in pans. Bake at 350 for 35-38 minutes.Â
***Cinnamon chips can be found online at www.hersheysstore.com. They sell for about $2.75 plus shipping and handling costs. I have not been able to find them in stores around me, but if you are able to even better!
