Not only do these watermelon cupcakes look great, they taste great too. They'll make everyone smile and are great for summer parties.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 3/4 cup granulated sugar. 2 large eggs. 1/2 cup milk. 1/2 tsp vanilla extract. 1/2 cup mini chocolate chips. Red food coloring. Green food coloring. Black food coloring.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Mix the flour, baking powder, and salt together in a bowl with a whisk. Melt the butter and mix it with the sugar in a different bowl until it is light and fluffy. One at a time, add the eggs and beat well after each one. Add the vanilla extract and mix well. Slowly add the dry ingredients, mixing in between adding the milk. Start with the dry ingredients and end with the milk. Don't mix any further than that. Split the batter in half, making two equal parts. To make it look like watermelon, add red food coloring to one part. Put about half of the pink batter into each cupcake liner using a spoon. Put a few small chocolate chips on top of each cupcake to look like watermelon seeds. Place a small amount of the plain batter on top of each cupcake to cover the chocolate chips. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. On a wire rack, let the cupcakes cool all the way down. Add green food coloring to a small amount of frosting to make the "rind" of the watermelon. Cover the cupcakes with the green frosting, but make sure you can see the pink center. Put black food coloring dots on the "seeds" with a toothpick. Give your cute watermelon cupcakes to people and enjoy them!
