Ingredients: 2 boneless, skinless chicken breasts. 2 cups mixed vegetables e.g., carrots, broccoli, bell peppers. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. Put chicken breasts on a baking sheet that has parchment paper on it. Put minced garlic, dried thyme and rosemary, salt, and pepper in a small bowl. Spread the olive oil mixture out on the chicken breasts by brushing it on them. Put the mixed vegetables on the baking sheet around the chicken. Pour any extra olive oil mixture over the vegetables. Put it in an oven that has already been heated up and bake for 20 to 25 minutes, or until the chicken is done and the vegetables are soft. Enjoy while hot!
