Ingredients: 1 lb fresh shrimp, peeled and deveined. 1 cup fresh lime juice. 1 cup fresh lemon juice. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup chopped cilantro. 1 jalapeo pepper, seeded and minced. 1 avocado, diced. Salt and pepper to taste. 8 tostada shells. Lettuce leaves for garnish. Sliced radishes for garnish.
Instructions: In a large bowl, combine the fresh lime juice and fresh lemon juice. Cut the fresh shrimp into small pieces and add them to the citrus juice mixture. Cover and refrigerate for about 30 minutes, or until the shrimp turns pink and opaque, indicating it's cooked by the acidity of the juice. In another bowl, mix the diced tomatoes, diced red onion, chopped cilantro, minced jalapeo pepper, and diced avocado. Gently fold the shrimp mixture into the vegetable mixture. Season with salt and pepper to taste. To assemble, place a lettuce leaf on each tostada shell to prevent it from getting soggy.
