Here's an example of a delicious nutrient packed meal with very little effort... presenting... Tomato Rosemary Balsamic Roast 7 simple ingredients... 5 medium size tomatoes, 1 onion, 2 sprigs of rosemary, 1/4 cup balsamic vinegar, sea salt, pepper, and the star of the show THE ROAST. Can we persuade you to try a grassfed bison chuck roast from @thehonestbison? It's what we used here and it was by far the most delicious and tender roast we've made using this recipe. Grassfed bison is a clean source of protein, high in iron, and provides healthy omega-3 fats. We can't speak highly enough of it. So back to the recipe... 1. Cut onion and tomatoes in quarters and place in bottom of a slow cooker. Also place one rosemary sprig in. 2. Place roast on top of veggies and liberally rub with sea salt (we used Aztec Sea Salt here). Also sprinkle rosemary from other sprig on top. 3. Pour balsamic vinegar over the roast. 4. Put lid on and cook on low for about 7-9 hours or until the meat is fork tender and falls apart easily. 5. Ladle out drippings, tomatoes, and onions into a deep skillet. Crush down tomatoes and reduce over medium heat until it becomes a little thicker. Stir frequently to prevent burning. 6. Serve meat with tomato sauce on top. A nice green salad can complete this nourishing meal. Enjoy!!
