Well I'm technically Chinese so I probably am not the best person to talk about it. But anyway, what happened is that most Westerners, when they look at an Asian who is not Chinese/Japanese/Korean, they often feel like they don't "look Asian" and therefore don't count. (they do count ofc, it's just that Westerners feel like they don't.)
Chinese, Japanese, and Koreans have long been catered as a sort of standard as to what an Asian looks like. Why? I can't say I understand or know. Cuz like... Yo. India's in Asia. A good chunk of Russia is in Asia. A lot of the Middle East is technically in Asia too.
Personally, I've considered referring to Chinese/Japanese/Korean Asians as "far east asians" but then again, that is... probably not the best term to use, lol. Thing is, Asia's so big, it's kinda weird that Westerners have tried to group it up into one "look." (I could talk about racial fetishization but that's off topic. Kinda.)
But yeah, I THINK it's partially because people who aren't Han Chinese, Korean, or Japanese, don't fit the Western idea of what "Asian" looks like. :T
