Recipe: Fried Fish with Corn Sauce
I love anything fried! And this is one of my favourite dish. I tend to avoid deep frying due to the amount of oil required, so I am shallow frying the fish instead.Â
Recipe adapted from Taste Of Hongkong:
Rinse fish fillet under cold running water. If the fish is frozen, pour hot water over the fillet to defrost it.
Pat dry and cut the fish into desirable pieces (into about 5-6cm squares).
Roughly marinade the fish little salt and pepper.
Mix batter ingredients until smooth.
Heat oil in a frying pan over medium heat
Gently dip the fish fillet into the batter and cover all sides.
Put them into the frying pan. Fry until golden brown (about 3-4 minutes) and flip to fry the other side.Â
Remove from pan and place fish on absorbing paper.
2tsp cornflour, dissolved in 4tsp water
Chop the white part of the scallion and thinly slice the green parts.
Heat oil in a pan (used for frying the fish). Add garlic and white part of scallion. Fry until fragrant.
Add corn kennels and mix together.
Add chicken stock, sugar, salt and pepper. Mix together and bring to boil.
Add cornflour mixture and mix until the sauce thicken.
Add egg and stir quickly. Mix evenly.
Add scallion, and cook for another 1 minute.
Remove from heat. Place fried fish on a large plate and pour the sauce over the fish.
