The salad is delicious. It has seared Ahi tuna with a strong chimichurri sauce, on top of fresh arugula and creamy avocado slices. A great mix of tastes and textures for a light meal that fills you up.
Ingredients: 2 Ahi tuna steaks 6 oz each. 2 cups arugula. 1 ripe avocado, sliced. 1/4 cup chimichurri sauce. 1 tablespoon olive oil. Salt and pepper to taste.
Instructions: Add salt and pepper to the Ahi tuna steaks. In a pan, heat the olive oil over high heat. For rare, sear the tuna steaks for one to two minutes on each side. For doneness you want, cook them longer. Take the tuna out of the pan and let it rest for a few minutes. Then, cut it into thin slices. Put the arugula on plates to serve. Add sliced avocado and seared Ahi tuna on top. Put the chimichurri sauce on top of the salad. Serve right away and enjoy!

Our cats are amazing lazy and fat and just before we left for lunch two had found sun on the rug. Snow is starting to extrude off the roof. I actually enjoy Zoom/Teams meetings: it’s a social event! (The new moth poster will be in all future Zoom shots.) On the evening of The Fairly Big Snow there were no sidewalks and for some reason our dog took off like a Churchill Downs racehorse right in the middle of the street.
