Scrapcooking: Vegan Peanut butter Yellow pea Curry
Chop some veggies you have at home, I used celery, carrot and garlic. Heat a pan and pour in some oil. Fry the veggies together with your favorite spices. I had some pepper, garam masala, paprika, and also about two tbsp of red curry paste. Stir and add oil if it gets dry. Add your peas (or other beans or tofu, whatever you like) and one or two tbsp of tamari (soy sauce). Now it’s time to add water, use about one cup and stir together with half a cup of peanut butter until it’s all smooth. Add more water to get the texture you like. Press half a lemon into the curry and add some leafy greens, like spinach. Taste and add what you feel is needed. Serve as is or with basmati rice or bread. So yum!
