Scones that taste great and are good for you, made with fresh orange zest and poppy seeds, are great for a low-carb breakfast or snack.
Ingredients: 2 cups almond flour. 1/3 cup granulated erythritol sweetener. 1 tablespoon poppy seeds. 2 teaspoons baking powder. 1/4 teaspoon salt. 1/4 cup unsalted butter, chilled and cubed. 1 large egg. 2 tablespoons heavy cream. 2 tablespoons fresh orange zest. 1 teaspoon vanilla extract.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put poppy seeds, baking powder, salt, almond flour, and erythritol a sugar substitute in a large bowl. Add the cold butter cubes to the dry ingredients. Then, use a pastry cutter or fork to cut the butter into the flour until it looks like big crumbs. Add the egg, heavy cream, orange zest, and vanilla extract to a different bowl and mix them together using a whisk. Add the wet mixture to the dry ones and mix them together until a dough forms. Place the dough on a lightly floured surface and roll it out into a circle that is about an inch thick. Get an empty baking sheet and cut the dough into eight wedges. The scones are done when they are golden brown and cooked all the way through after 18 to 20 minutes in the oven. Let the scones cool down a bit before you serve them. Have fun!
