First of all, I love the headcanons, they are so in character for them.
Second of all, do you ever think Jack or Nurm got into a situation when adventuring that caused them to need knowledge of "medicine"(Technically they don't really have medicine besides enchanted golden apples and potions, but whatever I like to think of it being more realistic sometimes) Like maybe having to bandage the other, or having to deal with the other getting a broken bone with any healing potions on them?

Oooh this is an interesting idea!! They definitely would've had many happenings during their adventures where they'd need to heal their injuries, but not have any potions available as a quick and easy remedy. I'd imagine that they were particularly reliant on potions as a healing resource (which Vos would've been able to aptly provide) during adventures, and didn't break out of the habit even after their main potion master.. well.. yeah. Combined with their increasing wariness and anxiety around adventuring, I figure that they maybe would've started exhausting potions more quickly and impulsively during very tense encounters, quickly dwindling their supply and thus leaving them to fall back on traditional medicine.
Thankfully Jack still remembered his training at Sidekick Academy (still hearing his younger self whining about boring first aid assignments and how he was going to be an adventurer, not a healer) and Nurm remembered enough about Villager medicine practices (to which his past self would've groaned about needing to actually use for once). I can definitely see Jack needing Nurm to apply a makeshift splint and bandage him up after getting just a little too careless during a thunderstorm "[I told you to watch out for the skeleton horses!!]", or Nurm getting Jack to patch up some pretty bad wounds on the go.
They both take care of each other in their own ways, of course, and are incredibly patient whilst looking after one another. Nurm is an absolutely lovely and sweet caretaker, he often asks Jack to tell him if he's pressing down too hard while tending to his wounds. Jack tells him his pain tolerance is high enough and to just go ahead (the man still winces ever so slightly though). Jack meanwhile likes to tell stories and jokes to Nurm while fixing him up to lighten the mood, Nurm listening and taking his mind off of the pain. Although sometimes they have to break when Nurm laughs too hard or reaches out to pinch him for talking too much (or both).
