Wow, vegan banana pancakes! Tasty and so easy. 2 mashed up, ripe bananas, add 1 & 3/4 cups of spelt/gluten free flour & 1 cup almond milk, a pinch of salt, 3 tbsp of oil, 2 tsp, 1tbsp sugar, 1 vanilla extract and whizz up in blender. Heat coconut oil in a frying pan and cook for a few mins either side and transfer to oven whilst you cook the next batch.
