I put this together from Memory Alpha, so it's about as accurate as I can get without watching the entire show and making notes myself.
You might be interested to know, the Rio Grande is the only runabout to survive the entire show.

On 02-992 on DS9′s Promenade, you can find Spacecraft Resupply.
It mostly has the basic parts for small, private shuttlecrafts, the ones that go between DS9 and Bajor or Ferenginar to deliver fresh food and merchandise. Hull patches, graviton stabilizers, valve seals, and so on. It also has a number of tools for use on ships, like self-sealing stem bolts, EJ7 interlocks, and various scanning tools of basic tricorder technology. It also stocks a few rarer things for the starships that come around, such as bio-neural cell packs and laser micrometers.
So, really, there’s no canonical proof that other runabouts aren’t named after anything else, they really could just be Sisko’s preference.
